2006 Findleton El Dorado Cabernet Sauvignon "Dancers"
The 2006 Findleton Estate and Vineyard Cabernet “Dancers,” named after Pamela Findleton’s “Cabaret Dancers” painting, is 100% Cabernet Sauvignon from Matson Vineyard located in Pleasant Valley. The grapes were hand picked, gently destemmed and crushed, and fermented with an extended maceration to achieve a more structured, complex wine. The wine was barrel aged for 18 months with approximately 30% new French oak. The 2006 Dancers Cabernet is medium to heavy bodied with spicy, herb-accented blackberry aromas and flavors of black plum, redcurrant, incense, and a lingering finish of berries, dark chocolate, and pepper. This wine is delicious now, but will become more complex in the bottle.
